First, we will put flour in a bowl, then in it, we will put 1/2 tsp of baking powder. We will mix it once and then put oil in it. We will also mix oil and maida with the help of our hands.
Now we will put water in it and prepare a soft dough. We just have to assemble the dough as much as we can with the help of water. If you need water in between, add water little by little to it and make a soft dough. We have to make it this way because we need many layers in Balushahi, and that layer comes from this method. You can see that what we have is now ready. After this, we will leave it for 15 to 20 minutes, and by then, we will have our sugar syrup ready.
In a pan, we will take 250 gm of sugar to make a sugar syrup and add 125 ml of water.
We will melt the sugar over a low flame, constantly stirring it. We need a thick sugar syrup for Balushahi. We'll cook it for 3–4 minutes over medium heat. After some time, we will lift the syrup on the spoon and see that the last drop on the spoon should fall slowly.
Then we will add one tsp of cardamom powder and a small amount of food coloring (optional). Then we'll turn the heat to high and give it one more boil. After turning off the gas, we will cover it and leave it this way, and by then, we will be ready for Balushahi.
We will again mix the dough after leaving it for 15 minutes. Now, it's ready to be used to make balushahi. Let us make balls of it to make balushahi. With the help of our hands, try to give it a round shape. Then we will press it and give it the shape of a peda. And then, at its center, we will make a hole.
Then, in the same way, we will prepare all our Peda.
To fry Balushahi, we will use boiled oil on a low flame in a pan. Note that we have to keep the flame on low to medium here too, and one by one, we will put all our balushahi in the pan and let them slowly fry. Until it goes up on its own, we will not shake it.
After 10 minutes, all these balushahi will start floating. And when the color of the Balushahi becomes dark, we will reverse it. Now we will turn it again and again, and here we will raise the flame from medium to high. We will try to get a nice almond color.
So, now that our balushahi is ready, we'll serve it on a plate.
Then we will dip it in hot sugar syrup now. You must leave your balushahi for 8 to 10 minutes after tipping it into the sugar syrup. In the meantime, we will flip Balushahi several times using a spatula. It will help Balushahi absorb the syrup well.
Its color and texture had completely changed after 10 minutes. It is ready to be served. If you want to serve it hot or cold, it is tasty in every situation. Make it Raksha Bandhan at your home and enjoy it with your loved ones. And finally, we will garnish it with chopped almonds.
