Take 250 gms all purpose flour in a bowl. Add 1/4 tsp salt to it.
Add 60 gms ghee (Clairified butter) to it.
Prepare a soft dough. The dough should not be very hard nor very soft.
Cover the dough with a moist cloth.
We will use 200 gms Mawa/Khoya to prepare our Gujiya mixture
We will use 20 pieces of cahew, almonds, raisins and 1/2 cup dried grated coconut to prepare our gujiya mixture
Take 1 tsp ghee in a pan.
Roast the dry fruits and coconut in the pan. Do not roast it a lot.
Roast the mawa in a pan for a few minutes till it does not stick to the pan anymore.
Sugar Cyrup: Take 300 gms of sugar in a pan
Add 300 ml of water to it.
Heat the mixture on high flame. Keep stirring the mixture. After there is a boil, lower the flame.
Check the consistency of the sugar syrup. It should not be very thick nor should it be water like. You can add 1/4 tsp cardamon powder to the sugar syrup
Add 50 gms sugar to mawa.
Mix the dry fruits and mawa together. Add 1/2 tsp cardamon powder to the mixture.
Mix everything well. Your gujiya mixture is ready.
Start making small balls from the dough we prepared earlier.
Flatten the dough with a rolling pin. The flattened dough should be a bit thick.
Add some water to the end of the dough(this is important) and start filling the flattened dough with the mixture we prepared earlier.
Close the ends as shown in the image
Taper the ends of the uncooked gujiya as shown in the image. For more clarity on shaping the gujiya you can watch the video between 12:00 and 13:00.
There are different shapes that you can create.
Take oil in a pan for deep frying the gujiya. The oil should not be very hot or else the gujiyas will not be cooked properly from the inside.
After the gujiya turn light brown, take them out of the oil and add them to the sugar syrup immediately.
Make sure the syrup is warm hot or else the guy will not absorb the sugar syrup. Leave it in the sugar syrup before taking it out
Your gujiyas are ready. Garnish it with some dry fruits. Enjoy!!!
