We will need 150 gms of sooji/rava (semolina), 150 gms of sugar, 150 gms of ghee (clarified butter), 50 gms of crushed dry fruits, handful of raisins and 1/2 tsp cardamon powder.
Heat a pan and add 150 gms of ghee (clarified butter) to it. Keep the flame to medium.
After the ghee gets hots add dry fruits in it and fry them. Do not over cook the dry fruits. Just let them turn light brown. Add the cashews at the end or else they might turn bitter due to over cooking.
Take the dry fruits out and keep them aside. We will use them at the end.
We can use the same ghee that we used to fry the dry fruits. Let the ghee get hot. Add sooji to it and start cooking the mixture. You might reduce the ghee a little bit according to your convenience.
Cook it for a few minutes on a medium flame.
After a few minutes, you will notice that the mixture has turned brown and the ghee starts separating from the mixture. You might lower the flame at this stage.
Add 450 ml of water to the mixture. The water should be 3 times that of the sooji we take.
Keep the flame low and add sugar to the mixture. Leave some sugar to be added at the end.
Cook everything well. You will see that the sooji starts absorbing the water and starts to turn thick.
Add the remaining sugar to the mixture and cook the halwa for a couple of minutes.
Add the fried dried fruits to the mixture and mix everything well.
Add 1/2 tsp cardamon powder to the mixture. Your Sooji Halwa is almost ready.
Mix everything well together. Check the consistency of the halwa. Do not make it extremely thick while cooking. The Halwa will automatically become a bit thicker after it cools down.
Your Halwa is ready. Garnish it with dry fruits. Serve it hot. Enjoy!!!
