
Zucchini Ricotta Rolls Recipe | How to make Stuffed Ricotta Rolls

Ingredients
- 1 cup ricotta cheese
- 2 tsp parmesan cheese
- 0.5 piece cherry tomatoes
- 1 tsp Spinach
- 4 zucchini
- 10 sundried tomatoes
- 2 tbsp Olive Oil
- 2 tsp basil
- 1 tsp cumin powder
- 1 tsp salt
Instructions

Cut thin slices of Zucchini

Brush some olive oil on both sides of the zucchini strips

Garnish it with salt, chili flakes and black pepper

Grill the zucchini strip on a griller.

Make sure to grill it from both sides

Take 1 cup of ricotta cheese. You can also use paneer/cottage cheese in case ricotta is not available.

Add some basil leaves to it.

Add 2 tsp of parmesan/cheddar cheese, salt, pepper and chili flakes to the mixture and give it a quick mix.

Add 1 tsp of the mixture on one side of the zucchini strips.

Add some sun dried tomatoes on the top

Roll the strips and pin them with a toothpick.

Your Zucchini Ricotta Rolls are ready. Garnish them with sesame seeds and olives. You can serve them immediately or keep in the fridge for some time and serve them cold. Enjoy!!!
